Ingredients
1 cup red lentils washed thoroughly
2 Tablespoon olive oil
1 Onion diced
4 Large Carrots diced
1 Large Sweet Potato diced
1 clove Garlic, finely diced
1 Tablespoon Miris Moroccan Spice Blend
4 cups vegetable stock
1 Tablespoon Miris Harissa Paste
Salt to taste
Pepper to taste
Chopped fresh coriander for garnish
Greek Yogurt to garnish
Method
Heat oil in a medium pan, add onions & garlic until glazed
Add all other ingredients (not yogurt and coriander), simmer for 20 mins
Use a stick blender to make soup into a smooth consistency
Serve with a dollop of Greek yogurt and Coriander
(Note – If you want a bigger chilli hit, add more Harissa paste)
